The company spent £2.75 million developing the Sun Wharf at 48-50 Tooley Street, near London Bridge Railway Station, with plans to open the pub on Tuesday, September 30, 2025.
This has also led to the creation of 100 jobs.
It will be managed by Aurimas Aperavicius, former manager of The Ice Wharf in Camden.
The premises, noted for their distinctive brick arches, were home to The London Dungeon attraction for nearly 40 years, until 2013.
The pub’s name is in homage to the historic Sun Wharf that was replaced by the No.
1 London Bridge complex in the mid-1980s.
The Sun Wharf will open daily at 6.30am, closing at 12.30am from Monday to Saturday, and at 11.30pm on Sundays.
Food will be served from the opening time until 11pm every day.
The menu will include a variety of real ales and traditional ciders alongside craft and world beers.
The pub will also hold a selection of draught ales and bottled beers from local and regional brewers.
The Sun Wharf will cater to family dining during the week, with children, provided they are with an adult, being allowed in the pub until 9pm.
The new establishment has a 4,336 square foot customer area, is wheelchair accessible, and has a specially adapted toilet for people with disabilities.
The pub features two entrances onto Tooley Street, with preserved brickwork, and a combination of new flooring and lighting.
Additionally, The Sun Wharf will display historical photos and details of local history, as well as artwork and images of local scenes and characters of the area, together with sculptural features.
Pub manager Aurimas Aperavicius said: “Myself and my team are looking forward to welcoming customers into The Sun Wharf and we are confident that the pub will be a great addition to London Bridge’s social scene.”
